Our Mango Shrimp Tacos provide a perfect balance of protein, fiber, and healthy fats. This refreshing yet savory dish comes together in under 45 minutes, making it an easy and delicious dinner option! The mango salsa is packed with antioxidants like vitamin C, which boosts immunity and supports healthy skin.

 



Ingredients

4 servings / 2 tacos per serving

  • 1 (16 oz) package raw frozen shrimp, peeled and deveined
  • 1 Tablespoon low-sodium soy sauce
  • 1 Tablespoon honey
  • 1 lime, divided
  • 2 tsp salt, divided
  • 2 tsp ground pepper, divided
  • 2 tsp garlic powder, divided
  • 2 tsp onion powder, divided
  • 1 mango, chopped
  • 1/2 avocado, chopped
  • 1/2 small vine ripe tomato
  • 1/2 small red onion, chopped
  • 1/2 c fresh cilantro, chopped
  • 8 (6-inch) tortillas

Directions

  1. Thaw shrimp under cold water and remove any remaining veins and tails.
  2. Cut shrimp into bite-sized pieces.
  3. In a medium bowl, toss shrimp with soy sauce, honey, juice of ½ lime, and 1 teaspoon each of salt, pepper, garlic powder, and onion powder.
  4. Cover and refrigerate for at least 2 hours.
  5. Prepare the mango salsa: In a medium bowl, combine mango, avocado, tomato, and onion. Season with the remaining salt, pepper, garlic powder, and onion powder.
  6. Heat 1 tablespoon extra virgin olive oil in a large sauté pan over medium to high heat.
  7. Add shrimp and cook until no longer translucent, about 5-7 minutes.
  8. Place shrimp in tortillas and top with mango salsa and chopped cilantro.
  9. Serve and enjoy!
