Ingredients
Serves 8-10
- 9 chicken breasts, cut thin
- 1/2 c cilantro lime marinade or your preference
- 4 bell peppers, sliced
- 2 sweet onions, sliced
- 1/4 tsp cumin
- 1/4 tsp smoked paprika
- 1/4 tsp chili powder
- 1/2 lime, juiced
- salt, to taste
- pepper, to taste
- 16-20 soft tortillas
Directions
- Marinate the chicken for at least 2 hours.
- Grill chicken on high-medium heat, flip once, and cook until internal temp is 165°F (8-10 minutes). Slice and set aside.
- Sauté vegetables on medium-high heat. Season with spices, lime juice, salt and pepper. Cook until tender (15 minutes).
- Warm tortillas in the oven (5 minutes).
- Serve chicken and vegetables in tortillas and top with your favorite accompaniments like cheese, guacamole, sour cream, and salsa.
